Chinese Orange-Barbecue Cashew Chicken
Place a large skillet over high heat with 2 turns of the pan of oil, about 2 tablespoons. Season the chicken with salt and pepper. When the pan is very hot, add in the meat and stir-fry until golden brown, about minutes. Remove the meat from the pan and reserve on a plate. Add another tablespoon of oil, then add the bell pepper, onion, garlic and ginger to the skillet and stir-fry until tender-crisp, 3 minutes. In a small bowl, stir together the hot sauce, tamari, Hoisin sauce, orange marmalade and stock.
Montalcino Chicken with Figs and Buttered Gnocchi
In my head, I have this idea of how my life should be. With this idea, I have all of my blog posts typed up ahead of time and scheduled to go live first thing every morning. But lately, the reality has been so much different. Take this post for example. I was planning on putting Abbi down to bed, then spending the rest of the evening typing up posts, visiting blogs, etc. Well, I put her down, and she immediately started crying. Boy, was I wrong!
Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain, reserving 1 cup of the pasta cooking water and the pot. While the pasta is working, in a large skillet, heat the EVOO, 2 turns of the pan, over medium-high heat. Season the chicken with salt and pepper and add to the skillet. Sprinkle the rosemary on top and cook the chicken until crispy and brown, 8 to 10 minutes. Transfer to a platter. Whisk the balsamic vinegar and marmalade into the skillet, scraping up the browned bits from the bottom of the pan.
